Green Eggs and Ham Pancakes!

My kids love pancakes but I've always struggled with how little nutrition they offer. Then I spoke to my little sister, Beth the other day. She said that she was making spinach pancakes. Cool! We have spinach in our fruit shake I make every morning, I just never considered putting it into our pancakes. Beth told me to just blend the spinach and milk together in the blender- so that's what I did. I couldn't even tasted the spinach at all in the pancakes.



And it passed the test with the kids. Evie gave spinach pancakes a thumbs-up!

  2. Glad you guys liked them... I think I'm going to make some for dinner tonight! I got a big pack of organic spinach for .79 cents! It expires tomorrow though so spinach in everything for the next couple days :)

  3. You could just add green food coloring. That way it still tastes good, but looks healthy. I made apple cinnamon pancakes last week. Make the batter and add apple sauce, cinnamon, and apple slices (fried in butter). Not too heathy though:(

  4. The milk calendar (2010) has an AWESOME recipe for whole wheat apple cinnamon pancakes. It makes a pretty big batch so I freeze them and the kids throw them in the toaster during the week. You could probably google the recipe if you're interested. I don't think Bailee would be down with green pancakes. lol...

  5. This post gave me another idea: Green Eggs! (I told you I have a lot of spinach to use up in the next couple of days) So tonight's dinner featured Green Eggs and Green Pancakes :)

  7. Carrie-Yep, I just used my normal pancake recipe and added the spinach into the milk.
